From the Stoll Kitchen: BLT Salad Recipe

This light, fresh salad is perfect for any summer or fall occasion. Whether it’s a precisely arranged dinner party or an outdoor barbecue, the bright, bold colors of this BLT Salad recipe add the perfect pop of color to any serving table, landing at just the right balance between a simple, yet decorative dish.

It combines the traditional ingredients of the classic BLT sandwich into a lighter and slightly healthier dish. Crunchy, savory bacon is mixed with crisp croutons, two hard-boiled eggs and sweet, tangy cherry tomatoes, topped with rich, grated cheese and situated on a bed of freshly chopped lettuce.

The assembly process is rather simple and straightforward. First, wash the fresh vegetables and hard-boil the eggs.

Next, fry the bacon. I recommend this oven-frying technique for fast, easy prep and clean up.

Cut, dice and chop all prepared ingredients to your preferred size.

Place all items together in a large serving bowl and mix them to an even consistency.

The element of this salad that makes it truly unique is the tangy mustard-accented dressing that is added to the dish before serving. The essential ingredients of milk, mayonnaise and sugar create a thick, smooth base for the dressing while the mustard and vinegar provide a mild bite to complement the creamy blend.

Whisk together all dressing ingredients until evenly blended. Refrigerate the dressing mixture until you are ready to serve the salad. It can be served at room temperature or chilled.

Before serving, pour the dressing mixture over the salad until it is evenly coated. If you prefer a lighter glaze, you can also leave any excess on the side for those who like a little extra dressing on their leafy greens.

Salad Ingredients

1 head lettuce, chopped

8 slices bacon, fried and chopped

2 hard-boiled eggs, chopped

1 c. shredded cheese

2 c. croutons

1 pt. cherry tomatoes, diced

Dressing Ingredients

½ c. sugar

1 tsp. mustard

1 Tbsp. vinegar

1 Tbsp. milk

1 c. mayonnaise

Place all salad ingredients in a large serving bowl and mix to an even consistency.
